The changes in the food industry have generated the obligation that the comestibles produced are innocuous and apt for human consumption. For that reason and contributing to the profile of the industrial engineer towards management, it has been created an elective subject focused and the food chain. The objective of this work is to present the contribution of this subject in the generation of graduation projects. Fifteen graduation projects have been developed about: design of good practices on manufacture , analysis of dangers and critical points of control, Management systems of innocuity, based on different norms BRC, ISO 22000, etc, or requirements of the Argentine Nourishing Code. In conclusion, the subject has allowed the students to grow in the local food industry and to generate their graduation projects, having the teachers of the subjects as tutors.
